Thai Slaw Salad recipe – 97 calories
Ingredients:
1 (16 ounce) shredded cabbage (coleslaw mix)
1 small red or green pepper, seeded and thinly sliced
1/2 seedless European cucumber, sliced thin
4 scallion, thinly sliced
20 leaves fresh basil, shredded
toasted sesame seeds
For the dressing
1 garlic clove, minced
1/2 teaspoon crushed red pepper flakes
1/4 cup rice wine vinegar
1 tablespoon soy sauce
2 tablespoons honey
2 tablespoons vegetable oil
1 teaspoon toasted sesame oil
Preparation:
1. Combine all the vegetables in a bowl.
2. In a small plastic container, combine the dressing ingredients and shake well for about 1 minute.
3. Drizzle the dressing over the vegetables and toss well to coat evenly.
4. Let stand for about 10 minutes, and re-toss before serving; garnish with toasted sesame seeds.
