Ingredients:
4 large baking potatoes
2 tablespoons snipped fresh dill (or 1 1/2 teaspoons dried dill weed)
1/4 cup butter, melted
4 teaspoons lemon juice
1/3 cup sour cream
1/2 teaspoon garlic powder
1 dash pepper
Preparation:
1. Scrub the potatoes and bake at 425° F for about 30-45 minutes (until tender).
2. When done, remove from oven and cut in half lengthwise.
3. Scoop out each potato half, leaving a thin shell.
4. In a large bowl, mix the potato pulp and 3 tablespoons butter.
5. Add the rest of the ingredients (except the remaining butter).
6. Beat until smooth.
7. Pile the mixture back into the potato shells.
8. Place in a buttered baking dish.
9. Brush the tops with remaining butter.
10. Bake at 425° F for about 20 minutes (until golden brown).
Ingredients:
1 1/2 cups diced tomatoes
1 cup diced green bell pepper
1 cup diced cucumber (peeled)
1/3 cup green onion
1/2 cup minced fresh parsley
1 tablespoon olive oil
1/4 cup fresh lemon juice
2 tablespoons water
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
Preparation:
1. Combine all the ingredients in a bowl and chill for at least 1 hour before serving.
Ingredients:
1 (8 ounce) package cream cheese, diced
2 (10 ounce) cans crescent roll dough
1 tablespoon butter, softened
1 tablespoon milk
1/2 cup white sugar
1 teaspoon sour cream
1 teaspoon lemon juice
1 cup confectioners’ sugar
3/4 teaspoon vanilla extract
Preparation:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Slice the unrolled crescent roll dough into 1/4 inch slices.
3. Place the dough slices on a cookie sheet and make a slight indention in the middle.
4. In a large bowl, mix together the cream cheese, sour cream, white sugar, lemon juice and vanilla extract.
5. Add a tablespoon of filling to each roll.
6. Bake in the preheated oven for about 15-20 minutes.
7. In a small bowl, stir together the sugar, butter and milk.
8. After the Danish have cooled, drizzle with the icing.
Ingredients:
4 cups cabbage (shredded or thinly sliced)
1 tomato (cut into 8 wedges)
1/2 English cucumber (peel left on, cut into round slices)
4 carrots (shredded)
1 green pepper (sliced into rings)
Thousand Island dressing (to taste)
Preparation:
1. Place the cabbage into the bottom of a large serving bowl.
2. Top with the shredded carrots.
3. Add the sliced green pepper.
4. Slide the cucumber slices down the side of the bowl, so that they are “standing” on the inside of the bowl, surrounding the salad.
5. Place the tomato wedges on the top of the salad.
6. Serve with Thousand Island dressing.
