Zucchini Cakes recipe – 158 calories
Ingredients:
2 cups shredded zucchini
1 egg
1 cup Italian seasoned breadcrumbs
1 teaspoon mustard
1 tablespoon light mayonnaise
1 tablespoon Old Bay seasoning
Preparation:
1. Preheat the oven to 350 degrees F; grease a baking sheet.
2. In a large bowl, combine the zucchini, egg, bread crumbs, mustard, light mayo and Old Bay seasoning.
3. Mix well and form into patties.
4. Bake for about 20 minutes on one side; turn the patties over and bake for 20 more minutes (or until golden brown).

On a Diet
I think you can serve these with almost anything you want.
When I was younger, I used to eat these cakes with tomatoes and Feta cheese. I’ve also tried serving them with sour cream and lemon wedges.
The last time I prepared this recipe, I served them with marinara sauce, and it was very good. Just use your imagination! 🙂
