Whole Wheat Blueberry Muffins recipe – 184 calories
Ingredients:
1 cup blueberries, fresh or frozen
2 cups whole wheat flour
1 1/4 cups buttermilk
1 teaspoon baking soda
2 egg whites, lightly beaten
1/2 cup honey
1/3 cup vegetable oil
Preparation:
1. Preheat the oven to 350 degrees F.
2. Coat 12 muffin cups with cooking spray.
3. Sift together the flour and baking soda.
4. In a separate bowl, whisk together the egg whites, buttermilk, honey and oil until creamy
5. Stir in the blueberries to the mixture.
6. Pour the wet ingredients into the dry ingredients.
7. Fold together with a rubber spatula until the batter is moist, yet remains slightly lumpy.
8. Pour into muffin cups and bake for about 30-35 minutes.

These muffins sound outstanding. I always have trouble with breakfast because I tend to eat cereals that have too much sugar or even worse, grab a doughnut.
These would be great to have for days that I’m running late.

I made 1 batch of Blueberry & 1 batch of Rasberry. I topped both with sliced almonds. I have to be honest I do not like this recipe. My husband claims that they were very dry, and I believe the 2 that I force fed him are going to be the only ones he will eat out of the 24. I think they taste dry aswell. I have never made anything with whole wheat before so it may be the flour that makes it seem different. Not sure… I just am not sure If I will make these again.

Everything that you use whole wheat flour in will taste dryer. It’s just what it does.
