These cookies are tender and crumbly, very much like shortbread. Their mild coconut flavor and the bits of chewy raisins and rich walnuts make these cookies perfect with a cup of tea!
Walnut and Raisin Cookies – 75 calories
Ingredients:
1/4 cup raisins
1/4 cup walnuts, chopped into coarse pieces
1/4 cup desiccated coconut
1 large egg
3/4 cup flour
1 teaspoon baking powder
1/3 cup powdered sugar
1/3 cup butter, softened
1/2 teaspoon vanilla essence
Preparation:
1. Preheat the oven to 325° F (160° C).
2. Cream the sugar and butter together.
3. Add the (slightly beaten) egg and vanilla essence.
4. Sift the flour and baking powder together.
5. Add the dessicated coconut, raisins and walnuts to the flour and mix with your hands.
6. Add this mixture to the butter and sugar mixture; fold gently.
7. Put spoonfuls of the batter 1 inch apart into a prepared (greased or covered with butter paper) baking tray and slightly flatten.
8. Bake for about 20 minutes (or until light golden brown).
9. Let cool for about 5 minutes, then take the cookies out of the tray and cool completely on a wire rack.
10. Store in an air tight container.
