Tossed Vegetable Salad recipe – 119 calories
Ingredients:
4 cups teared lettuce
2 large tomatoes, chopped
1 small cucumber, peeled and chopped
1 yellow pepper, chopped
1 orange bell pepper, chopped
1 small green pepper, chopped
3 small garlic cloves
6 green onions, chopped
2 teaspoons basil
2 teaspoons parsley
1/3 cup lemon juice
1/3 cup vegetable oil
salt and pepper, to taste
Preparation:
1. Place the vegetables and green onions in a large bowl and toss well.
2. In a smaller bowl, add the garlic, lemon juice, vegetable oil, and seasonings together.
3. Whisk until well blended.
4. Add the dressing to the salad and toss again.
5. Let chill for up to 4 hours.
