Ingredients:
1 fresh pineapple
1/4 teaspoon cayenne pepper
1 tablespoon olive oil, plus
extra virgin olive oil (for brushing on grill)
sea salt
Preparation:
1. Heat the grill to high, brushing the grates with oil.
2. Prepare the pineapple by removing the tops and the skin.
3. Slice the pineapple into rounds (about 3/4 inch thick) and remove the cores.
4. In a small bowl, combine the cayenne pepper, olive oil and salt.
5. Brush the pineapple slices with the oil mixture.
6. Place the pineapple slices on the grill, cover and cook for about 8-10 minutes (until charred and tender), turning once.
