Rhubarb Muffins recipe – 190 calories
Ingredients:
1 1/2 cups fresh rhubarb, finely chopped
2 cups flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
1/4 cup butter, melted
3/4 cup brown sugar
1 cup milk
1 teaspoon lemon juice
Preparation:
1. In a large bowl, combine all the dry ingredients.
2. In a separate bowl, combine the remaining ingredients and pour over the dry mixture.
3. Stir until the batter is just moist and lumpy.
4. Spoon into greased muffin cups.
5. Bake at 375 degrees F for about 20-25 minutes.
