Pumpkin Cookies recipe – 59 calories
Ingredients:
1 cup canned pumpkin
1 cup margarine or butter, softened
1 egg
1/4 cup ground flax seeds
1/2 cup brown sugar, packed
1/2 cup Splenda granular
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon cinnamon
Preparation:
1. Preheat the oven to 350 degrees F.
2. In a large bowl, beat the margarine, sugar and Splenda until light and fluffy.
3. Add the egg, pumpkin and vanilla; blend well.
4. Add the dry ingredients and mix well.
5. Drop the dough by rounded teaspoonfuls 2 inches apart on ungreased cookie sheets.
6. Bake at 350 degrees F for about 10-12 minutes (or until light golden brown around the edges).

This cookies look nice. I’ll definitely try it.

I found the dough to be VERY sticky! I added Quick oats to the recipie to thicken the mixture, and it seemed to work.
I’d say 3/4ths the amount of butter, add 1 and a 1/2 cups of Quick Oats.
