Pickled Beets recipe – 127 calories
Ingredients:
2 (16 ounce) cans sliced beets
2/3 cup cider vinegar
2/3 cup sugar
1 cup sliced onion
5 cloves, whole
1 cinnamon stick
Preparation:
1. Drain the beets, reserving about 2/3 cups of the liquid (if necessary add water to make 2/3 cups of liquid).
2. In a large pan, combine all the ingredients and bring to a boil.
3. Simmer for about 10 minutes, stirring occasionally.
4. Let cool and refrigerate.
5. Before serving, drain and remove the cloves and cinnamon stick.
