Persian Tomato and Cucumber Salad recipe – 68 calories
Ingredients:
1 large tomato
1 large cucumber
1 large onion
parsley
1-2 tablespoon olive oil
1/4 cup lemon juice (or to taste)
salt, to taste
Preparation:
1. Finely chop the tomato, cucumber and onion.
2. Mix the chopped vegetables with the parsley, olive oil and lemon juice.
3. Add salt to taste and serve (or let the salad sit in the refrigerator for a few hours to get an even better taste).

Thanks for the great simple recipe. I love how names can make all the difference. Would you rather have a Persian tomato and cucumber salad or a Persian tomato and cucumber salad. I take the Persian version.

I stumbled upon this a year ago or so…and I LOVE this recipe! It’s so simple, and yet so good. I serve this at our Preachers Conference for a salad with lunch, and have gotten compliments on it. My husband and I really enjoy this recipe. Once in a while I add some oregano, but usually just the basics, and only a very little salt, and fresh cracked pepper for a nice bite.

Try this with chopped mint and lime juice instead. I have been eating it every day for a week!!!
