Mint Cucumber Salad recipe – 72 calories
Ingredients:
3 medium cucumbers (peeled, seeded and thinly sliced)
2 tablespoons heavy cream
8 ounces plain yogurt
1 garlic clove, minced
1/2 cup chopped onion
1 tablespoon finely chopped fresh mint
3/4 teaspoon dried oregano
1 teaspoon salt, to taste
1/4 teaspoon pepper
Preparation:
1. Place the cucumbers and onion in a mixing bowl.
2. In a small bowl, combine the remaining ingredients and mix well.
3. Pour the dressing over the cucumber/onion salad. Toss to coat well.
4. Chill for at least 3 hours before serving.
