Meal-in-one Casserole recipe – 192 calories
Ingredients:
1 lb hamburger meat
3 medium potatoes, sliced
2 medium onions, chopped
2 tablespoons rice, uncooked
2 cups carrots, sliced
1 cup chopped celery
1 1/2 cups tomatoes (or tomato juice)
1 tablespoon shortening
salt and pepper, to taste
Preparation:
1. Brown the onions and celery in the shortening.
2. Add the hamburger meat and brown.
3. Grease 1 1/2 quart casserole dish and put a layer of potatoes, carrots and add rice.
4. Top with the meat mixture and tomatoes.
5. Bake at 375 degrees F for about 1 hour.
