Lychee Salsa recipe – 49 calories
Ingredients:
2 cups fresh or canned lychee fruits (pitted, peeled and diced)
1/2 jalapeno pepper, minced
1/4 cup red bell peppers, diced
1 clove garlic, minced
1 tablespoon sweet onions, minced
1 tablespoon fresh cilantro or parsley, minced
3 teaspoons olive oil
1 tablespoon fresh squeezed lime juice
salt and pepper, to taste
Preparation:
1. Combine all the ingredients together.
2. Cover tightly and refrigerate at least 3 hours (or overnight).
3. Serve with your favorite chips or on top of grilled fish, chicken, or pork.

This is perfect this salsa will add beautiful flavor and color to any chicken or fish dish. I usually make a mango salsa but am going to give this a try!
