Lemony Couscous with Mint, Dill and Feta recipe – 200 calories
Ingredients:
1 (10 ounce) box couscous
4 ounces Feta cheese, crumbled
1 1/2 cups diced English cucumber
1 pint grape tomato or cherry tomato, halved
1 garlic clove, minced
1/3 cup chopped green onion
1 tablespoon olive oil
1/3 cup fresh lemon juice
2 tablespoons chopped fresh mint
1 tablespoon chopped fresh dill
1 teaspoon salt
2 cups water
Preparation:
1. In a saucepan, combine the olive oil, 2 cups water, garlic clove and salt; bring to a boil.
2. Gradually stir in the couscous.
3. Remove from the heat. Cover and let stand for about 5 minutes. Fluff with a fork; let cool.
4. In a large bowl, combine the couscous, tomatoes, cucumber, green onion, lemon juice, mint and dill; toss well. Add the Feta cheese.
