Lemon Yogurt Muffins recipe – 156 calories
Ingredients:
1 1/2 cups all-purpose flour
1 egg
1 cup rolled oats
1 lemon, peeled and chopped
1/2 fresh lemon rind, peeled and chopped
1/2 lemon, juice of
1/4 cup lemon juice
1 1/4 cups plain yogurt
1/4 cup granulated sugar
1/2 cup granulated sugar
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon salt
Preparation:
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a large bowl, mix together the flour, 1/2 cup granulated sugar, rolled oats, baking powder, baking soda and salt.
3. Peel the lemon, remove the white pith and finely chop.
4. In another bowl, mix together the finely chopped peeled lemon, yogurt, egg, and 1/4 cup lemon juice.
5. Add the wet ingredients to the dry ingredients, mixing only until they are blended.
6. Fill 12 well-greased muffin cups two thirds full.
7. Bake for about 20 minutes (or until a toothpick inserted into the center of a muffin comes out clean).
8. Prepare the syrup: Put 1/4 cup granulated sugar, the grated rind and juice of 1/2 lemon in a small pot.
9. Bring to a boil and reserve.
10. When the muffins are baked, prick all over with a toothpick.
11. Brush the warm syrup on the hot muffins.
12. Let the muffins cool in the pan.
