I got a few emails asking me for the KFC coleslaw recipe. While I don’t know their exact secret recipe, I found this copycat that tastes just like the original! For even less calories, use Splenda instead of sugar. Enjoy! 🙂
KFC Coleslaw recipe – 94 calories
Ingredients:
1 head (about 8 cups) finely diced cabbage
1/4 cup finely shredded carrots
1/2 cup mayonnaise
2 tablespoons minced onions
1/4 cup buttermilk
1/3 cup granulated sugar
1/4 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
Preparation:
1. Finely dice the cabbage and carrots (preferably using a food processor).
2. Place the shredded cabbage and carrot in a large bowl and stir in the minced onions.
3. Using the regular blade of your food processor, process the remaining ingredients until smooth.
4. Pour the sauce over the vegetable mixture and mix well.
5. Cover the bowl and refrigerate for several hours or overnight before serving.

I used pre-shredded bagged cabbage and it turned out great. I guess green cabbage would be the best, but you can also try using some red cabbage if you want.

Interestingly, my nutritional analysis caluclator included in my MasterCook program brings this out to a little more than 155 calories. Everything else is pretty much on the nose. Nice potassim amount though… also, keep in mind, this recipe serves 10, not four, if you’re on a diet, which is just about the size portion that you would get at KFC in one of their to go containers.
Using artifical sweetner and low-fat mayo will knock the calories down for sure.

mmmmmm, that photo makes the coleslaw look absolutely delicious. But I never liked KFC coleslaw because it is so sweet. Now I see why– 1/3 cup sugar, wow!

Hi, I need your help. My wife is in charge of a birthday party for one of the big-wigs at her work on Tuesday. She wants me to make a Chocolate Torte with Apricot Filling. She also wants it to be low in calories (she works at a hospital). The problem is, I can’t find a good recipe. The one my wife found will not work, since the proportions are wrong and I don’t have the time to tweek it. Question…Do you have a recipe that I can use?

I love KFC coleslaw and unfortunately the one by my house has extremely rude employees so I haven’t gone in over a year. I saw this recipe and had to give it a try. I think it’s pretty darn close!! I had to substitute the buttermilk, so I think it was a bit more watery than I expected but it was delicious. I had to pry myself away. Thanks for sharing the recipe!!!!!

I am a retired qualified head chef.
Only use (Dutch)White cabages or red cabage-they will give a crunchy texture no bitternes. Green cabages are only sutable for cooking.
