Frostbite Cookies recipe – 83 calories
Ingredients:
1 cup all-purpose flour
1 teaspoon baking soda
3/4 cup raisins
8 ounces white chocolate chips
1 1/2 cups rolled oats
1/2 cup butter, at room temperature
1 large egg
1 teaspoon vegetable oil or shortening
3/4 cup sugar
3 tablespoons orange juice or orange-flavored liqueur
2 teaspoons orange zest
Preparation:
1. In a small bowl, combine orange juice (or liquor) and raisins and let stand overnight (or if you’re in a hurry, cover and microwave for 1 minute, then cool covered).
2. In a large bowl, beat the butter and sugar until fluffy.
3. Beat in the egg and orange peel.
4. In another large bowl, combine the flour and baking soda, then stir into the butter mixture.
5. Add the raisins, any soaking liquid, and oats and mix well.
6. Drop dough by rounded teaspoonfuls onto greased baking sheets, spacing 2 inches apart and flattening slightly.
7. Bake at 350° F for about 10 to 12 minutes.
8. Transfer to racks and cool completely.
9. Put the white chocolate chips and oil in a small deep bowl and microwave for about 3 – 4 minutes on low power, stirring once.
10. Let stand 2 minutes, stir until smooth.
11. Dip one-third of each cookie in chocolate and set on waxed paper.
12. Chill until the chocolate is firm.
