Fried Brussels Sprouts recipe – 163 calories
Ingredients:
1 lb Brussels sprouts
3-4 garlic cloves, minced
4-6 tablespoons extra virgin olive oil
salt, to taste
white pepper, to taste
lemon juice (optional)
Preparation:
1. Remove the brown outer leaves of the Brussels sprouts.
2. Cut the Brussels sprouts in half.
3. In a saucepan, heat the olive oil over medium heat.
4. Add the Brussels sprouts and fry them for about 10-15 minutes, stirring occasionally, until they turn a very dark brown color (but be careful not to burn them).
5. In the last minute of cooking, add the garlic and stir in to combine (be careful not to burn the garlic!).
6. Season with salt, white pepper and lemon juice (if using) to taste. Serve warm.

I love brussels sprouts prepared like this! A couple of options include using half butter and half olive oil (really makes a difference). Another option is to add a couple teaspoons of maple syrup at the very end of the cooking time and just stir the sprouts around until lightly caramelized in the syrup. Also, it’s expensive, but I have found that Yellingbo gold olive oil is the best for sprouts!

Wow, that looks good. Have you ever tried roasting Brussels sprouts or other firm vegetables? Use the same ingredients but instead of frying, spread the vegetables on a cookie sheet and roast in the oven at about 400 degrees until they become crispy. Works great with broccoli, cauliflower, carrots, green beans.

Brussel sprouts are not my favorite vegetable, but they are so nutritious. I’m trying to find ways to prepare them so that they are palatable and this looks good.

I love brussel spouts if they are small and sweet but never thought to cook them this way. The garlic sounds divine but Im not sure on the cloves. Will let you know when I try them. This sounds 100% better than my steaming them.
