A few years ago I had a revelation: chicken and mushrooms go extremely well together. Since then, I’ve tried many recipes using these two main ingredients, and this low fat chicken and mushroom recipe is one of my favorites (another really nice one is the creamy chicken and mushroom soup recipe).

Chicken and Mushrooms recipe – 189 calories
Ingredients:
4 small boneless chicken breasts
2 1/2 cups sliced mushrooms
1 tablespoon minced onion flakes
1/2 cup chopped red or green pepper
1 dash garlic powder
2 teaspoons honey
1/4 cup soy sauce
Preparation:
1. Preheat the oven to 350 degrees F.
2. Place the chicken breasts in a 9×13 baking dish.
3. Sprinkle the chicken with the onion flakes.
4. In a small bowl, combine the honey, soy sauce, and garlic powder; pour the mixture evenly over the chicken.
5. Cover and bake for about 30 minutes.
6. Spread the mushrooms and red or green peppers evenly over the chicken and continue to bake, covered, for about 20 more minutes (or until the mushrooms are tender).

YUM! I love this recipe, looks amazing. I like your list of healthy, fresh ingredients. I would add natural chicken breast myself, I am a fanatic about antibiotic and hormone free chicken. My favorite brand is Coleman, they have a lot to offer healthy eaters.

I have looked for this recipe for many years. Back in the 80’s I was a Weight Watcher and received a calendar with great recipes in it this seems to be that same recipe or at least uses the same ingredients as the one on the calender. I am greatful to have found this one. Thanks

Meat Loaf
2 lbs Lean ground Beef
2 eggs
1/2 diced onion or 2 teaspoons of onion powder (not Salt)
1 chopped stalk of celery
6 or 8 mushrooms chopped if desired. (not really necessary mixing will break them up)
4 strips of bell pepper (set aside)
1/2 to 3/4 sleeve saltine crackers
1/2 to 3/4 cup of milk (enough to make it VERY wet
1 teaspoon salt
3/4 teaspoon of black pepper
1 small can of tomato sauce
Combine all ingredients and mix well. Add additional milk if necessary, shape into loaf or large balls for individual loafs.
Pour tomato sauce over top coating the top surface.
Push slices of bell pepper into the top of the loaf
Cook at 350 for about 1 hour. Test to make sure it is
done. Serve with mashed or Baked potatoes or you favorite side dish.

Jalapeno-Lime Chicken recipe – 162 calories
Ingredients:
1 lb boneless skinless chicken breast halves
1 jalapeno pepper, seeded and diced
1 tablespoon lime juice
1 teaspoon lime zest
1 tablespoon olive oil
2-3 cloves garlic, peeled and minced
1 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
sliced black olives, for garnish (optional)
1 sliced jalapeno pepper, for garnish (optional)
Preparation:
1. Combine the diced jalapeno pepper, lime juice, lime zest, olive oil, minced garlic, cumin, salt and pepper in a resealable plastic bag.
2. Place the chicken in the bag and press to remove the excess air; seal tightly.
3. Turn the bag over several times in order to coat the chicken with the marinade mixture.
4. Chill for at least 30 minutes (or overnight).
5. Preheat the grill or oven broiler to medium-high heat.
6. Place the chicken on the grill or in the broiler pan.
7. Cook for about 12-15 minutes (or until the chicken is no longer pink and the juices run clear when pierced with a fork), turning twice to get grill marks.
8. Garnish with black olives and jalapeno slices if desired.
Servings: 4

Sounds pretty good … i may finely chop and sautee some onions instead of onion powder, and I’d probably cut the soy sauce down to 1-2 tablespoons of the low-sodium kind.

Do NOT cook the chicken for 30 minutes at 350F before putting in the veggies, it is already overcooked at this point!
I’m going to try 15-20 minutes next time, maybe less. For now I will eat rubberchicken!

What a great chicken recipe!
Years ago I had a friend that cooked beef steaks in a similar manner. His dinner was composed of the steak and a salad. He lost scads of weight.
I prefer dark meat even though it’s not as healthy as chicken breasts. I’m going to use this recipe and substitute leg quarters.

Thank you so much for the mushroom and chicken recipe (189 calorie). It was very delicous, my 5 year old son even loved it. I made it with a spring mix salad with walnuts, cranberries, feta cheese and a balsamic and olive oil dressing. Very good together.
