Blueberry Buttermilk Oatmeal Pancakes recipe – 147 calories
Ingredients:
1 1/2-2 cups blueberries (fresh or frozen)
2 cups buttermilk
1 1/4 cups oatmeal
2 eggs, beaten
1/4 cup butter, melted
1 cup flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon sugar
Preparation:
1. In a bowl, mix the oatmeal and buttermilk. Add the eggs.
2. In a separate bowl, combine the dry ingredients.
3. Add the dry ingredients to the oatmeal mixture.
4. Stir in the butter.
5. Gently stir in the blueberries (or add 10-12 blueberries to each pancakes after pouring the batter on the griddle).
6. Cook on a hot greased griddle until bubbles show through.
