Blue Cheese, Salami and Radish Sandwiches recipe – 182 calories
Ingredients:
12 slices rye bread
2 ounces blue cheese
2 ounces cream cheese
6 ounces hard salami
4 large radishes, trimmed and bottoms cut flat
1 green onion, cut into 1-inch pieces
1 cup fresh parsley leaves
6 tablespoons butter, room temperature
12 parsley sprigs
Preparation:
1. Thinly slice the radishes.
2. Mince the parsley. Transfer to a large square of waxed paper.
3. Using a food processor, process the cheese and green onion until smooth.
4. Spread the butter evenly on top and sides of the bread slices. Dip the bread sides in the parsley and then spread 2 teaspoons of the cheese mixture on top of each slice of bread.
5. Cut the salami into 18 very thin slices and then cut each slice into quarters.
6. Place 6 salami quarters down center of each slice of bread.
7. Arrange the radish slices in a rosette on top of the salami and then place a parsley sprig in center.
8. The sandwiches can be prepared 6 hours ahead, covered and refrigerated (bring them back to room temperature before serving).
