Asparagus and Tomato Skillet recipe – 138 calories
Ingredients:
2 medium tomatoes
1 1/2 lbs asparagus
1/4 cup thinly sliced green onion
3 slices bacon, fried, drained and crumbled
1 tablespoon water
3 tablespoons vinegar
2 teaspoons sugar
1/4 teaspoon salt
Preparation:
1. Saute the onion in the bacon drippings until tender.
2. Add the bacon, water, vinegar, sugar and salt. Bring to a boil over medium-high heat.
3. Add the asparagus.
4. Reduce the heat to medium; cover and cook for about 5 minutes.
5. Cut the tomatoes into eight wedges.
6. Add the tomatoes to the skillet and cook, covered, for about 3-5 minutes.
