Asparagus and Water Chestnuts recipe – 58 calories
Ingredients:
1 (10 ounce) package cut frozen (or fresh) asparagus
1 (5 ounce) can sliced water chestnuts, drained
1/4 cup red onion, diced
2 teaspoons olive oil
2 teaspoons balsamic vinegar
1 teaspoon butter (optional)
Preparation:
1. Heat the olive oil and butter (optional) in a skillet over medium-high heat.
2. Add the onion and saute for a few minutes to release the flavor into the oil.
3. Add the asparagus, water chestnuts and vinegar, then cook and stir for about 10 minutes (until the asparagus is cooked, but still crunchy).
