<p><strong>Vietnamese Chicken Soup recipe &#8211; 163 calories</strong></p>
<p><strong>Ingredients:</strong><br />
8 ounces boneless skinless chicken breasts<br />
1 ounce cellophane noodles<br />
1 tablespoon peanut oil<br />
2 teaspoons minced ginger<br />
2 teaspoons minced garlic<br />
1/4 teaspoon red pepper flakes<br />
2 tablespoons fish sauce<br />
28 ounces chicken broth<br />
2 tablespoons chopped green onions<br />
2 tablespoons chopped fresh cilantro<br />
1 tablespoon chopped fresh basil</p>

<strong>Preparation:</strong><br />
1. Soak the cellophane noodles in very hot water.<br />
2. While the noodles are soaking, cut the chicken breasts into thin julienne strips.<br />
3. In a deep skillet, heat the peanut oil over medium-high heat; add the chicken, ginger, garlic and pepper flakes.<br />
4. Cook for about 1 minute, stirring; then add the fish sauce and broth and bring to a boil.<br />
5. Reduce the heat to medium and simmer for about 8 minutes (until the chicken is done).<br />
6. Drain the noodles and cut into short pieces (about 1-1 1/2 inches long).<br />
7. Arrange noodles at the bottom of the bowls; ladle the soup over the top and sprinkle with cilantro, basil and green onions.<br />
8. salt and pepper, to taste</p>

1. Combine the carrots, onions, bouillon cubes and broth in a dutch oven with 5 cups of water; bring to a boil.<br />

3. Whisk the eggs and lemon juice, and quickly add to the hot soup while stirring.<br />
4. Add the oregano and season with salt and pepper to taste.</p>

<p><strong>Ingredients:</strong><br />
2 pieces of thinly sliced chicken<br />
1 mango, diced<br />
1 garlic clove, minced<br />
1 red pepper<br />
1-2 teaspoons olive oil<br />
1 tablespoon rum<br />
2 teaspoons basil	 (for the chicken)<br />
2 teaspoons chili powder (for the chicken)<br />
1 teaspoon cinnamon or 1 teaspoon brown sugar<br />
1 teaspoon hot sauce or 1 teaspoon chili powder (for the sauce)<br />
salt and pepper, to taste</p>

<strong>Preparation:</strong><br />
1. Mix 2 teaspoons of basil with 2 teaspoons of chili powder, dip the raw chicken in this mixture.<br />
2. Saute the minced garlic in olive oil over medium heat.<br />
3. Add the chicken and saute for about 5-7 minutes (until cooked). Place the chicken in the oven or microwave to keep warm.<br />
4. Deglaze the same pan with the rum. Slice the red pepper length-wise and saute in the pan, adding a little more olive oil if necessary.<br />
5. Turn down the heat to medium-low. When the red pepper is still slightly crunchy, add the mango, cinnamon or brown sugar, and hot sauce or chili powder.<br />
6. Cook for only a few minutes, until the mango is warm and slightly mushy.<br />
7. Add the chicken to the sauce in the pan for about a minute to rewarm.<br />
8. Serve over white rice.</p>

<p>This is the easiest and juiciest chicken recipe I have ever made. Very tasty and quick to make, it&#8217;s perfect for a weekday meal when you&#8217;re too worn out to do a heavy prep!</p>

<p><strong>Baked Chicken Thighs recipe &#8211; 200 calories</strong></p>
<p><strong>Ingredients:</strong><br />
8 chicken thighs<br />
4 teaspoons soy sauce<br />
garlic powder</p>

<strong>Preparation:</strong><br />
1. Arrange the chicken thighs skin side up in a shallow baking dish.<br />
2. Sprinkle with garlic powder.<br />
3. Drizzle about 1/2 teaspoon soy sauce on each piece.<br />
4. Bake at 350 degrees Fahrenheit for about 50-60 minutes, until the skin is brown and crisp and the meat is ready to fall off the bones.</p>

<p><strong>Chicken and Mushrooms recipe &#8211; 189 calories</strong></p>
<p><strong>Ingredients:</strong><br />
4 small boneless chicken breasts<br />
2 1/2 cups sliced mushrooms<br />
1 tablespoon minced onion flakes<br />
1/2 cup chopped red or green pepper<br />
1 dash garlic powder<br />
2 teaspoons honey<br />
1/4 cup soy sauce</p>

<strong>Preparation:</strong><br />
1. Preheat the oven to 350 degrees F.<br />
2. Place the chicken breasts in a 9&#215;13 baking dish.<br />
3. Sprinkle the chicken with the onion flakes.<br />
4. In a small bowl, combine the honey, soy sauce, and garlic powder; pour the mixture evenly over the chicken.<br />
5. Cover and bake for about 30 minutes.<br />
6. Spread the mushrooms and red or green peppers evenly over the chicken and continue to bake, covered, for about 20 more minutes (or until the mushrooms are tender).</p>

<p>If you like new flavors and experimenting in the kitchen, try this chicken recipe. It&#8217;s very moist, and the marinade gives it a very interesting taste.</p>
<p><strong>Mahogany Chicken recipe &#8211; 186 calories</strong></p>
<p><strong>Ingredients:</strong><br />
2-3 large boneless skinless chicken breasts<br />
3 tablespoons Dijon mustard<br />
3/4 cup coffee<br />
1 tablespoon honey<br />
1 garlic clove, minced<br />
3 tablespoons lemon juice<br />
1/2-3/4 cup water<br />
1/4 teaspoon salt and pepper</p>

1. Mix all the ingredients with the chicken breasts and place in a ziplock bag. Refrigerate for about 8 hours (or overnight).<br />
2. Preheat the oven to 350 degrees F.<br />
3. Remove the chicken from the marinade and place it in a shallow baking dish. Pour the marinade in a bowl, thin with just a bit of water, and pour over the chicken.<br />
4. Bake, covered, for about 20 minutes; uncover and baste. Return to the oven and bake uncovered, basting again once, until done.</p>

<p><strong>Ingredients:</strong><br />
12 ounces boneless skinless chicken breasts<br />
6 cups torn spinach<br />
2 red peppers or green sweet peppers, cut into bite-sized strips<br />
2 cups torn leaf lettuce<br />
1 garlic clove, minced<br />
1 medium red onion, thinly sliced<br />
1/2 teaspoon lemon-pepper seasoning<br />
1/2 teaspoon dried rosemary, crushed<br />
2 tablespoons balsamic vinegar<br />
1 tablespoon cooking oil<br />
2 tablespoons water<br />
fresh rosemary sprigs (optional)</p>

<strong>Preparation:</strong><br />
1. In a large salad bowl, combine the lettuce, spinach, pepper strips and sliced red onion. Cover and chill the salad for up to 2 hours.<br />
2. Cut the chicken breasts into bite-sized strips. Toss the chicken with the lemon-pepper seasoning and rosemary.<br />
3. In a 10-inch skillet or wok, stir-fry the chicken strips and garlic in hot oil over medium-high heat for about 2-3 minutes (or until the chicken is tender and no longer pink).<br />
4. Remove the chicken from the skillet and add to the salad mixture.<br />
5. To make the dressing: add the vinegar and water to the skillet, stirring to scrape up any browned bits. Pour the dressing over the salad, gently tossing to mix.<br />
6. Transfer the salad to individual salad plates and garnish with fresh rosemary sprigs, if desired. Serve warm.</p>

2 (6 ounce) packages Southwestern chicken strips (diced and fully cooked)<br />
3 cups cooked rice<br />
3 (14 1/2 ounce) cans chicken broth<br />
1 (15 1/4 ounce) can whole kernel corn (undrained)<br />
1 (4 ounce) can diced green chilies (undrained)<br />
1 (16 ounce) can V8 vegetable juice<br />
1/2 cup chopped green onions<br />
1 1/2 cups salsa<br />
2 tablespoons minced cilantro (fresh or dried)</p>
<p><u>Optional toppings</u><br />
additional minced cilantro (fresh or dried)<br />
additional chopped green onion<br />
coarsely crushed tortilla chips<br />
shredded 4-cheese Mexican blend cheese</p>

1 lb boneless skinless chicken breast halves<br />
1 jalapeno pepper, seeded and diced<br />
1 tablespoon lime juice<br />
1 teaspoon lime zest<br />
1 tablespoon olive oil<br />
2-3 cloves garlic, peeled and minced<br />
1 teaspoon ground cumin<br />
1/4 teaspoon fresh ground black pepper<br />
1/4 teaspoon salt<br />
sliced black olives, for garnish (optional)<br />
1 sliced jalapeno pepper, for garnish (optional)</p>
<p><strong>Preparation:</strong><br />
1. Combine the diced jalapeno pepper, lime juice, lime zest, olive oil, minced garlic, cumin, salt and pepper in a resealable <a href="http://www.uline.com">plastic bag</a>.<br />
2. Place the chicken in the bag and press to remove the excess air; seal tightly.<br />
3. Turn the bag over several times in order to coat the chicken with the marinade mixture.<br />
4. Chill for at least 30 minutes (or overnight).<br />
5. Preheat the grill or oven broiler to medium-high heat.<br />
6. Place the chicken on the grill or in the broiler pan.<br />
7. Cook for about 12-15 minutes (or until the chicken is no longer pink and the juices run clear when pierced with a fork), turning twice to get grill marks.<br />

4 boneless skinless chicken breasts<br />
4 tablespoons chopped cilantro leaves, plus extra to garnish<br />
6 cloves garlic, chopped<br />
2 teaspoons black peppercorns, coarsely ground<br />
2 teaspoons Thai fish sauce (nam pla)<br />
2 limes, juice only<br />
2 teaspoons sugar<br />
1 tablespoon sunflower oil<br />
1 tablespoon light soy sauce</p>
<p><strong>Preparation:</strong><br />
1. Make a marinade using the lime juice, soy sauce, fish sauce, sunflower oil, garlic, ground peppercorns, sugar and cilantro.<br />
2. Blend well.<br />
3. Place the chicken breasts with the marinade in a shallow dish or resealable plastic bag, coating them well.<br />
4. Leave the chicken breasts to marinate in the refrigerator for at least 1 hour (but no more than 2), turning them from time to time.<br />
5. Preheat a heavy non-stick frying pan or ridged griddle pan and cook the chicken for about 7-8 minutes on each side (until the chicken is cooked through).<br />
6. Serve hot or cold, garnished with cilantro leaves.</p>
