
This soup is awesome and full of flavor – just what any good vegetable soup should taste like!
Chicken and Mushrooms recipe – 189 calories
Ingredients:
2 small potatoes, peeled and chopped
2 (14 ounce) cans diced tomatoes (undrained)
2 tablespoons olive oil
4 garlic cloves, chopped
1 large onion, chopped
2 large carrots, chopped
2 cups green beans (cut into 1-inch pieces)
1/4 head cabbage, chopped
1 medium turnip, chopped
2 small celery stalks, chopped
6 cups vegetable broth
1/2 teaspoon thyme
salt and pepper, to taste
Preparation:
1. In a large pot, heat one tablespoon of olive oil over medium-high heat.
2. Add the onion and cook until it becomes translucent.
3. Add the garlic and saute for a few minutes (don’t let the garlic brown).
4. Add the remaining chopped vegetables and saute for about a minute or two (add the second tablespoon of olive oil if needed).
5. While sauteing, add the thyme and season with salt and pepper to taste.
6. Place the sauteed vegetables in the crock pot, add the vegetable broth and tomatoes.
7. Cook on low for about 7-9 hours or high for about 4-6 hours.
8. Just before serving, mash some of the potato chunks against the side of the crockpot to thicken the soup, stir a little and serve.

I just found your blog and I love it! I am in the profession of dietetics and most of the “low calorie” or “diet” recipes that I find are LOADED with chemicals and processed foods. I love that all of the ones here use the natural ingredients and are very easy to make. Will definitely be coming back!

Crock Pots are great because you can leave them on all day while you’re at work and then you’ve got a meal by the time you get home, well of course it depends on the recipe I suppose – speaking of which, this is a real dandy one!

but why does everything you put in your mouth seems to have a very high sodium content? 534.8

wow that recipe was fantastic. Just cooked it today and it was amazing. The only Problem was, that i forgot the oil.

I see this is an old post but I am seeing only today so I wanted to comment. Crock pot is a favorite so wanted to ay I was delighted with your recipe. Though there may be few commercial Italian menus, the increasing use of herbs and veggies in routine Western recipes is something that is recommendable. For example, the pr4sence of celery stalks and thyme adds more nutrition tough in this recipe there is legume like beans for that purpose.

Hi! This is a great recipe and I will try it tomorrow! But, when I read the recipe, I noticed you said “Cook on low for about 7-9 hours or high for about 4-6 hours.” That seemed kinda wrong, so I was wondering if it is a mistake or should it actually be cooked for so many hours?? Seems weird for a soup.. Thanks though!
