  1. hey there, try this chicken dish

    * 500 grams Cubed chicken pieces
    * 5 Large tomatoes
    * 1 Large onion
    * 1 clove Garlic
    * 2 tablespoons Dijon or American mustard
    * 1 splash White or brown vinegar
    * Pepper
    * 2 pinches Salt
    * Brown or white rice
    * 4-8 leaves Cos or Iceberg lettuce
    * 1 tablespoon Chopped herbs (Oregano and thyme)

    Prepare sauce by blending tomatoes, onion and garlic in a food processor – Using canned diced tomatoes and combining with finely chopped onion and garlic is also fine.

    Start cooking the rice as per the instructions on the packet for however many serves you require.

    Heat two cupfuls of water in a pan and bring to a light boil, then add chicken pieces and cover for about five minutes or until chicken pieces are cooked through approximately 75%.

    Drain water from pan and replace with the sauce, stirring in mustard and vinegar. Add herbs, pepper and salt to taste. Cover and simmer on low heat for approximately 10-15 minutes, stirring occasionally.

    Once chicken is cooked, serve on a bed of lettuce leaves with a side of rice. Optionally, you can sprinkle some parmesan cheese over the top and/or garnish with basil leaves.
