
Baked Zucchini recipe – 114 calories
Ingredients:
4 medium zucchini
2 tablespoons Parmesan cheese
1/2 cup shredded cheese
1 tablespoon butter
1/2 teaspoon crushed garlic
ground black pepper, to taste
salt, to taste
Preparation:
1. Slice the zucchini lengthwise and score diagonally across the top of zucchinis.
2. Place in a baking dish.
3. Baste with melted butter and garlic, sprinkle with cheese and season with salt and pepper to taste.
4. Bake in a moderately hot oven for about 15-20 minutes (or until tender and crisp).

Good greif! Why did you leave the seeds in?
Scoop them out and fill them when cooked with
rice, pilaf, etc.

The “seeds” are just part of the vegetable. They are not something that needs to be removed. Scooping out the meat of the zucchini and adding rice/pilaf (ew) would absolutely ruin this dish for me and I’m sure many others. Adding some ricotta and/or sauce, however is fantastic
You don’t need to scoop it out to do so.

I agree – adding rice/pilaf would wreck the zucchini! We’re actually having this tonight with a nice meatloaf and baked potatoes…Yum!

I personally like the seeds!! I made something similiar to this and added white beans to the center to add some more protein and it was quite delicious!! Your picture looks great of this!!

You must be thinking of some other kind of Squash! Zucchini’s seeds are wonderful and I would never think of “scooping them out!”
